Step inside our bakery lab and you’ll find more than just stainless steel ovens and flour-dusted tables—you’ll discover the heart of our craft. This is where simple ingredients, guided by time and skilled hands, are transformed into loaves that carry both tradition and soul.
Every day begins with carefully weighed flour, water, and natural sourdough starter. There are no shortcuts here—only patience, precision, and respect for the rhythms of fermentation. On the marble workbench, dough is stretched, folded, and shaped by hand, one piece at a time. Each movement is intentional, preserving the integrity of the dough and allowing the flavors to develop fully.
Our ovens, serving a timeless purpose, are where the alchemy happens. Inside, golden crusts form (maillard reaction) and rich aromas fill the air. Rows of bannetons line the shelves, cradling the dough during its final rise, while every loaf receives the same care and attention as the one before it.
The lab is also the place where an entire chain of value comes to life: from organic farming to artisanal milling, from the baker’s craft to the final moment of sharing at the table.
